Matcha Ice-Cream Sandwhich

Who doesn’t love an ice-cream sand-which? Try out our My Matcha recipe for a healthy twist on an old classic.

What you need:

  • 2 ¾ C Almond Flour
  • ¼ C Cocoa Powder
  • ½ tsp Sea Salt
  • ½ tsp Baking Soda
  • 1 Very ripe mashed banana
  • ½ C Organic Butter melted
  • 1 Tbsp Vanilla
  • ½ C Chocolate Chips

Instructions:

Pre-heat oven to 350 F and line cookie sheets with parchment. Mix almond flour, cocoa powder, sea salt, and baking soda in a small bowl. Combine banana, butter and vanilla in a medium bowl. Then combine the dry and wet ingredients together. Add chocolate chips. Scoop a tablespoon of batter onto cookie sheets and flatten. Bake for 10-15 minutes. Cool before making sandwiches.

To make the ice cream

What you need:

  • 1 can Coconut milk or cream (the creamier the better)

Instructions:

Combine ingredients in a blender and blend until mixed well. Pour into ice cream maker and follow instructions for your ice cream maker.
